1. Avocado & Salmon Power Bowl

Ingredients:
1 salmon fillet
ยฝ avocado, sliced
ยฝ cup cooked quinoa
1 cup spinach or mixed greens
ยผ cup shredded red cabbage
ยฝ cucumber, sliced
Dressing: 1 tbsp olive oil + 1 tsp lemon juice + pinch of salt and pepper.
Instructions:
Grill or pan-sear the salmon until fully cooked, about 4โ6 minutes per side. In a bowl, layer quinoa, spinach, cucumber, and cabbage. Add sliced avocado and place the cooked salmon on top. Next, drizzle with the olive oilโlemon dressing and serve it warm or chilled.

3. Sweet Potato & Black Bean Tacos with Avocado Crema
This recipe helps maintain your sugar level balance and helps with your gut health.
Ingredients:
For the filling:
1 medium sweet potato, peeled and cubed
1 cup canned black beans, rinsed
Olive oil, cumin, chili powder, salt
For the avocado crema:
1 ripe avocado
Juice of 1 lime
2 tbsp plain Greek yogurt (or dairy-free alternative)
1 garlic clove
Salt to taste.
Corn or whole grain tortillas
Shredded red cabbage for topping
Instructions:
Toss sweet potato cubes with olive oil, cumin, chili powder, and salt, then roast at 400ยฐF (200ยฐC) for about 25 minutes, or until tender. Meanwhile, blend avocado, lime juice, yogurt, garlic, and salt until smooth to create a creamy avocado sauce.
Warm the tortillas and fill them with the roasted sweet potatoes, black beans, and red cabbage, then drizzle with the avocado crema before serving.
